I had a tooth extracted recently. This left me on a restricted diet for several days. The first day, I was restricted to only cold foods like ice cream, jelly, and yogurt.
I got sick of ice cream pretty quickly after I slept off the anesthetic. I started work on dinner. I took a cue from the tzatziki sauce I made for the lamb burgers a few months back. A Mediterranean style yogurt and cucumber soup would not only meet the restrictions on my diet but would also be satisfying to my palate.
Grate a peeled cucumber.
Add 2 minced cloves of garlic
Add 1 cup of skim milk
Add 1 cup of fat-free plain yogurt, or greek style yogurt
Add juice of ½ a lemon and a few twists of lemon zest
Once combined, stir and set to rest in the fridge for a few hours.
Once chilled, I added a few more strips of lemon zest. I was out of fresh mint so I opted for a bit of dried basil sitting around the kitchen.
